    We have a number of pressure cookers and use them frequently. They're favorites especially for soups made from dried bean, lentils, etc. No presoaking or long simmering. We have 2 electric pressure cookers but most often just use the stove top model like this with a simple, foolproof weight pressure control. The only real downside of an aluminum pot v. stainless steel is that the former tends to stain from acidic foods. If you buy a pressure cooker, be sure that it can reach 15 psi. Some only go to 10 or 12.

    Yeah, stainless steel is the way to go. The staining of the aluminum indicates its reactivity with your chow. How do you measure your cooker's PSI? Just curious.
