I'd rather have stainless with copper inserts on the bottom. You don't have to fool around with seasoning them or baby them when scrubbing food off to preserve the seasoning, or soak them or fill with water just to cool them down enough to wash, can stack them without the stack weighing 50 lbs, and often the handle is more thermally isolated so you don't need a mitt to pick them up.
Also, that seasoning is essentially carbonized (overheated) oil, one of the worst things you could possibly have in your diet, even eating teflon is less risky.
