Former Arby's wage slave here. And you're flat wrong. There is no reconstituted powdered beef there. The meat is strange, but for a whole different reason - it's roughly half chunks of meat and half meat paste shaped into a 10lb brick, roasted for 3 hours. The end product is tasty, but it looks weird as heck raw. Arby's roast beef is a powder they mix with water and let congeal into a beefy mass. Then it's "fresh-sliced" for your roast beef slider.
The only fast food carryout to sell Real Roast Beef was Roy Rogers when they first opened. The Roast would hang off a stainless Meat hook and they would cut the beef by hand and put it on the sandwich like a deli. Those were the good old days.
