The restaurants are taking the hit because they want new customers and to fill up empty tables... plus if the cost of the food to make a meal is only 1/3rd the cost of the meal, plus 18% gratuity, plus $35 or more minimum purchase, all they have to do is get you in the door to at least make a little profit and hope for a repeat customer.
Most of the restrictions aren't that bad. As #4 stated the gratuity and minimum purchase are the norm. Some restaurants add day or party number restrictions but they are the minority. I have used these "gift certificates" a couple of times and it's been easy and painless. It gives you the opportunity to check out some local "mom and pop" places without having to pay full price. The restaurants are banking on additional food/drink purchases and the opportunity to create repeat business if they do a good job. It's nice every once in a while to go somewhere besides the big chain restaurants and support the local restaurant owners. These are perfect for that.
We also use these very often. We have even ordered extra food to go if we weren't meeting the minimum and had no problem doing that. Every time we travel I look for places to eat that are on the site and save money every time. #4 is right, at around 30% food cost they can still make a little money and hope to get you back there again. If you order alcoholic beverages, they are in even better shape profit wise.
this worked out really well, went with one of my roomates to a restaurant we already frequent, and the coupon saved us about 8 bucks each after tip from our normal costs
