In general, photoelectric detectors are what you want. They react to the large particles that result from slow-smoldering fires that typically start in walls and kill people in their sleep.
Ionization detectors are more sensitive to the small particles from fast-burning fires, of the sort that start on the stove while you're standing right there and don't need a beeping thing to tell you about.
A unit with both is a fine idea. but if you have to pick just one, go photo.
