skip slime and just use the rubber plugs. Slime will add more weight to the wheel

Both have their place. With the plugs you may have to pull the tire and find the leak, requiring a jack, a level surface, and a lot more time which may not be practical depending on where you're stuck.

The weight, using their recommendation of 16 oz per car tire (+ wheel which are generally around 30-35lbs) would be about 3% of the total wheel weight.

I don't pull the tire to put in the plug. Just roll the vehicle until you can get a good angle and plug it.

That still requires finding the leak, which may not be so easy if you don't see a nail/etc in the tire or have a tub of soapy water to make bubbles from escaping air, and/or don't have the car elevated to inspect and rotate the tire. Using slime you don't have to do any of this.
