I don't, 5 gallons is too small for full sized, indeterminate tomatoes. You might be able to bring one to nearer full size (all else equal) if you fertilized more frequently and watered VERY often (a setup more like hydrophonics that just happened to include soil too), and used ropes to secure it from wind damage using an upright pot, but I use 5+ gallon buckets for 1st year pepper plants, herbs, etc... things that aren't expected to grow as large.
On the other hand if you want a novelty or can't put your tomato in the ground or an upright pot with a stake for some reason, whatever an upside down plant produces in these is better than nothing.
Might also be good if you have destructive children, pets or wildlife that would have more access to the plant if it weren't hanging above ground level. Doubt it would do much good against larger critters like deer unless it were hung so high it wasn't convenient for humans either.
