I am trying to decide which camera would be better. I have read the reviews and they point to the Nikon D60 for the most affordable for me ..over the Canon Rebel XT ..Any one have any thoughts on this

Personally I like the fit and finish of the Nikon D60. One reason I went with Nikon DSLR was the availability of the 18mm-200mm lens at the time of my purchase. Canon just recently release lens of similar range.
If you goto dpreview, you can look at the image samples.
Hope this helps.

I bought mine from Amazon.com. The price wasn't the cheapest, but the delivery was speedy.

I like the rebel, but I have to admit I never held a d60 before. So its hard to compare if i haven't tried out the other camera. Before i buy a camera I keep looking around local stores see if i can give them a hands on review, even if i end up buying it online.
I also second dpreview, its a good site, in fact here's a quick link so you can see basic info for each camera side by side.

I'd say that if your serious about photography, defiantly pick which brand that you like the lenses for the most since your buying into a system. Usually the lenses that are packaged with the package deals are crap. Overall in my personal poonion I found that nikon lenses are more bright(better bringing out colors) where the canon is a bit more true but mellower in color. Personally I prefer the canon, but its all a matter of taste. However, I know people that own both cameras and the pictures that came out of the Nikon with the packaged lense looked better then that that came out of the canon with the packaged lense.

oh as a side note, you may be able to find the rebel xt very cheap pretty soon since the xsi is replacing it.

d60 is more on the level of xsi

If you haven't decided yet, Costco has the Rebel XSI in stock. May also have a comparable Nikon in store too. Get both and try them out during their no hassle return period.
